Brinjal-250gms,
Ginger garlic paste-1tsp,
Til paste-1tsp,
Roasted peanut paste-2tbsp,
Tamarind juice-1tsp,
Onion paste-2nos,
Garam masala-1tsp,
Dhaniya pwd-1tsp,
Wet coconut-1tsp,
Turmeric pwd-pinch,
Chilli pwd-2tsp,
Salt-to taste,
Oil-as required
Procedure:
Cut the brinjals into 4 slits with stalk intact and fry them in oil for 5min & keep aside.Take oil in a pan & add ginger garlic paste n fry.add onion paste & fry ill golden brown.Add garam masala pwd,chilli pwd,dhaniya,turmeric,coco,salt & fry for 2min.Then add peanut & till paste,tamarind juice,and fry till oil starts coming out.Then add fried brinjals cook till oil leaves sides.Garnish with coriander leaves.Tastes better wih roti,biryaani,rice etc.
